The differences between the characteristics of Taiwan's high mountain oolongs and general oolongs:

According to the international definition, as long as it is semi-fermented tea and processed through the oolong tea process, it can be called "oolong tea" regardless of the tea variety. If these teas are produced in alpine tea areas above 1,000 meters above sea level, they will be called "alpine oolong tea". But in Taiwan, so-called "Taiwanese high mountain oolong tea" has stricter regulations. Except that the planting area must be in a high mountain with an altitude of more than 1,000 meters, the orthodox "mountain oolong tea" specifically refers to: oolong tea varieties (including the classic soft branch oolong, green heart oolong, big leaf oolong... etc.), And the tea leaves are processed according to the oolong tea production process.
